  2. We made these tonight-turned out really well except we found out Shannon HATES tahini sauce. It's not for everyone. a LITTLE sprinkle of blue or gorganzola cheese is nice plus some onion.

    Stuffed Chicken Breast

    Here is a quick and tasty protein recipe. These can be made ahead of time and they are portable for lunches and snacks. As far as the seasonings, experiment with your favorite fresh herbs and spices. I used garlic powder, oregano, and thyme for this batch.

    12 min prep time, 30 min cooking time

    • Large boneless, skinless chicken breasts
    • 1-2 Tbsp tahini per chicken breast
    • Chopped tomato
    • Shredded spinach
    • Seasonings to taste

    With a sharp fillet knife, slice the chicken breasts lengthwise, making a pocket to stuff. Spread the tahini in each chicken pocket. Fill with the spinach and tomato, or other veggies of your choice. Add any seasonings, close the chicken breast, and place in a baking dish. Bake in the oven at 350 degrees for 30 minutes.

  3. And I also must share this delicious chicken crock pot recipe-it will be hot and waiting for you after your evening crossfit class :-)

    WHOLE CHICKEN CROCK POT RECIPE

    Ingredients
    4 teaspoons salt
    2 teaspoons paprika
    1 teaspoon cayenne pepper
    1 teaspoon onion powder
    1 teaspoon thyme
    1 teaspoon white pepper
    1/2 teaspoon garlic powder
    1/2 teaspoon black pepper
    1 large roasting chicken (with pop-up timer if possible)
    1 cup onion, chopped (optional)
    Directions
    1 In a small bowl, combine the spices.
    2 Remove any giblets from chicken and clean chicken.
    3 Rub spice mixture onto the chicken.
    4 Place in resealable plastic bag and refrigerate overnight. (I usually skip this step because I'm always in a hurry).
    5 When ready to cook, put chopped onion in bottom of crock pot.
    6 Add chicken. No liquid is needed, the chicken will make it's own juices.
    7 Cook on low 4-8 hours.
    8 Note: I highly recommend a pop-up timer in the chicken because some crock pots cook faster/slower than others (my crock pot cooks this recipe in 4-5 hours).
    **We like to add some quartered lemon and garlic cloves we also crisp the chicken in the oven after it's done in the crock pot-20 mins or so at 350.
